Cherry & Chocolate Biscuits

These biscuits have a crunchy, crisp texture and a sweet taste.

Ingredients
225g Butter
140g caster Sugar
55g  Glacé Cherries chopped finely
280g Plain flour
55g Milk chocolate chips
1 egg yolk lightly beaten
2 tsp vanilla extract
pinch of salt

Method
1.Cream together the butter and sugar till light and fluffy

2. Beat in the egg yolk and the vanilla extract

3. sift in the flour and salt and mix well

4. Add the chocolate chips and cherries then mix well.

5. Wrap the dough in cling film and leave in the fridge for 30-60 minutes

6. Preheat the oven to 190degrees/Gas mark 5/ 375f and roll out the dough and cut into what ever shapes you want. My dough was too sticky to do this so I ended up rolling them into balls by hand and then just slightly flattening them on the tray.

7. Bake in the oven for 10-15 minutes till a light golden brown.

Mine didn't turn out great but oh well,
